Braised Mushrooms

250g Oyster Mushrooms 
​1 sliced onion
100g Olive oil
50g Tomato puree
2 Bay leaves
8 Black peppercorns
150ml Chicken broth
2 tblsp Dry white wine
1 Lemon
Salt and ground black pepper 
Cayenne pepper or paprika (optional)

First, clean the mushrooms, dry and cut into sheets with stems included.  Boil mushrooms in water and a little lemon juice for 2 minutes then let drain. Next, heat the oil in a pan and fry the sliced onion over low heat until translucent. Then mix the mushrooms, onion, tomato puree, bay leaves, chicken broth, and white wine in a clear, flat oven dish.  Preheat the oven to 180 degrees, cover the dish, and broil for 30 to 40 m. To present, remove the bay leaves, sprinkle a little paprika or cayenne and some finely chopped parsley.
