Dried Mushroom and Veggie Rice

1 kg of rice
4 finely chopped medium carrots
2 vertically sliced red onions
1 handful fresh coriander
1 sliced green pepper*
4 chopped garlic cloves
3 teaspoons cooking oil
Curry powder, to taste
50g dried mushrooms
2 Maggi cubes

Soak dried mushrooms in water and wait for 20 minutes then boil for 15 minutes. Chop mushrooms into small pieces then fry them in oil. Add carrots, onions, garlic and coriander and stir the mixture for 3 minutes. Add rice and stir for 2 minutes. When the rice resembles the carrots, add in boiled water and stir. Add Maggi, curry powder and salt to taste, then let the rice soak until ready. Serve hot.

*Add other vegetables of your choice, from broccoli to cauliflower or any others! Fried egg will add more protein.
