Brioche's new Togolese chef, Serge, was trained in Belgium and spent 25 years in Brussels as chief of kitchen preparing International and French cuisine. Feeling he mastered his role in Belgium and seeking a change, Chef Serge has since led Brioche’s three locations in revamping their menu from coffee, pastries and bread to include more savory options for diners all around Kigali.
While Irish potatoes are Chef Serge’s favorite food grown in Rwanda because of their superior flavor, he’s eager to feature other locally-grown crops on the Brioche menu.
Chef Serge appreciates the flavor of Kigali Farms oyster mushrooms and serves them in his vegetarian quiche and vegetable omelette.
