250g Oyster Mushrooms
1 sliced onion
100g Olive oil
50g Tomato puree
2 Bay leaves
8 Black peppercorns
150ml Chicken broth
2 tblsp Dry white wine
Salt and ground black pepper Cayenne pepper or paprika (optional)
First, clean the mushrooms, dry and cut into sheets with stems included.
Boil mushrooms in water and a little lemon juice for 2 minutes then let drain.
Next, heat the oil in a pan and fry the sliced onion over low heat until translucent.
Then mix the mushrooms, onion, tomato puree, bay leaves, chicken broth, and white wine in a clear, flat oven dish.
Preheat the oven to 180 degrees, cover the dish, and broil for 30 to 40 m.
To present, remove the bay leaves, sprinkle a little paprika or cayenne and some finely chopped parsley.
